I made this quick, but super amazing Vegan Strawberry Smoothie the other day that is so wonderful, you seriously have to stop everything and make it right now.
Sometimes, it’s like I just can’t seem to get enough to drink in my life. I don’t know if it’s something to do with just being thirstier one day over another or if it’s normal. What is normal, anyway?
But, regardless, what tends to happen on those one-off-thirsty days is that I come up with some random, glamorous drink that really hits the spot–eventually. Because water gets old and creativity is bred of boredom. Or something like that.
This time? The drink cravings hit and while I downed the third glass of plain water for the day, it hit me. Strawberry Smoothie. 🍓
But not just any strawberry smoothie–one so simple, but so very satisfying, that it would knock the socks off any soda or juice that I could grab off a shelf.
And vegan. A little extra dollop of awesome for that, of course.
So, off to the freezer I went looking for the main ingredient I would need: frozen strawberries.
See? The best smoothies are not ice-packed-nonsense. They’re based on frozen fruit.
Banana smoothie? Frozen bananas. 🍌
Pineapple smoothie? Frozen pineapple. 🍍

And with this Vegan Strawberry Smoothie, being able to use frozen strawberries allows for a smoother, more creamy texture that just melts in your mouth.
Needless to say, when I opened the freezer to find a bag of frozen strawberries, I knew I was on the right path.
Off I went to dig-out my immersion blender and a little coconut milk.
Because, seriously, this Vegan Strawberry Smoothie, the ultimate thirst-quencher, just got so very real.

Vegan Strawberry Smoothie
- 2 cups approx. frozen, sliced strawberries
- 1/2 cup coconut milk
- 1/4 cup sugar
- Mix coconut milk and sugar in a bowl.
- Pour coconut milk mixture over the frozen strawberries.
- Using an immersion mixer or blender, blend the strawberries and milk together until the mixture is completely smooth.
- In order to rim the glass, for a little added touch, you can dip the rim of the glass in corn syrup, then in sprinkles.
